Blackmouth Tacos - Anthony Marrese

After your successful day on the water, you can impress your family with an easy recipe of grilled salmon that makes amazing fish tacos.

 

Ingredients: 

    • ¼ cup olive oil plus 2 tbs for coating the    fillet of salmon
    • ½ cup apple cider vinegar
    • 1 tbs salt
    • 1 tbs black pepper
    • 2 tbs paprika
    • 1 tsp cumin
    • 1 tsp oregano
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1-2 tbs of chili powder (hot or mild)
    • 1 pound shaved cabbage
    • Lime wedges
    • 1 diced onion
    • Corn or flour tortillas
    • Chopped cilantro

 

1. Combine the salt, pepper, paprika, cumin, oregano, garlic, onion, and chili powders into the oil and apple cider vinegar. It should be very thin in consistency 

2. Coat the entire fish in a thin layer of olive oil and place it on a hot grill, skin side down. Extra points if you cook it on Alderwood coals (my favorite).

Immediately after putting the fish on the grill, start basting the fish with the oil mixture from step one. Repeat this step every couple of minutes throughout the cooking process.

3. Once you pull the fish off the grill, baste one last time with the remaining oil mixture and set aside.

4. The last step is to heat your tortillas on the grill and make your tacos with the cabbage, lime wedges, and cilantro! A nice hot sauce is always a welcome addition for me!
