Honey-Lime Cedar Salmon - Tiffany Haugen

 

Ingredients:

  • 1 fillet salmon (3-6 servings)
  • 1 tablespoon Worcestershire sauce 2 limes, thinly sliced
  • 1 tablespoon honey
  • 2 cloves garlic, minced
  • 2 tablespoons softened butter
  • 1 cedar plank soaked in water

Marinate fillet in Worcestershire sauce for up to 1 hour. If the fillet is thicker than 1”, inject with Worcestershire sauce and cook immediately. In a small bowl, mix honey, garlic and butter, set aside. Arrange slices from one lime on prepared plank. Place salmon fillet, skin side down, atop limes. Salt and pepper fish to taste. Spread butter mixture over fish. Place slices from the other lime atop the butter mixture. Grill or bake at 350° 15-25 minutes or until fish is opaque and flakes in large chunks. Garnish with fresh sliced limes if desired.

PREFERRED WOOD: Cedar, alder or oak.

RECIPE VARIATION: Substitute steelhead for salmon.
